Dairy Free Banana Cake

I am happy to introduce to you, my mom’s delicious banana cake recipe.



Although the original recipe holds a special place in my heart I had to give it a dairy-free makeover. This incredibly moist banana cake will blow your mind. Are you tempted yet?


Here is the recipe for this amazing dairy-free banana cake:

Prep Time: 10 minutes 

Cook Time: 45 minutes

Total Time: 55 minutes

Ingredients:

¼ cup avocado oil
1 cup sugar
2 eggs
1 tsp. baking soda
1 tsp. vanilla extract
¼ cup coconut milk
1 ½ cup whole wheat flour
1 ½ tsp. baking powder
3 mashed bananas
¼ cup dairy-free chocolate chips (optional)

Directions:
  1. Preheat oven to 350 degrees and grease a cake pan.
  2. In the bowl of a stand mixer, combine all of the ingredients. Mix until blended. You can also use a hand mixer.
  3. Scrape batter into prepared cake pan and bake in 350 degree oven for 45-50 minutes.
  4. Allow the cake to cool completely.
  5. Enjoy!
